Baked rabbit with romesco

Time: 35 min.           Difficulty:Easy            Rations: 4

1 rabbit of 1-1.5 kg, 1 jar of romesco sauce, olive oil, 1 chili pepper, 2 cloves of garlic, black pepper, chopped fresh parsley and salt.

1. Season the rabbit open in the middle and drizzle it with olive oil. Next, put it in the oven preheated to 200 ºC and bake it for 35 minutes.

2. Peel the garlic cloves, cut them into slices together with the chili and brown them over low heat in a pan with olive oil.

3. When the rabbit is ready, spread the sauce over it and serve it together with the romesco sauce and the freshly chopped parsley.

Baking stands out for its comfort and ease of use. In addition, it is ideal in weight control diets, as it allows us to obtain meat with a very juicy texture without adding fat. If this dish is accompanied with a varied salad that includes different types of vegetables, the vitamin content will increase, achieving a very healthy garnish.

Rabbit meat stands out for being very lean, with a low fat content and a very small proportion of saturated fatty acids. Its sodium and cholesterol content is much lower than in other meats, making it perfect to include in all types of diets. In this recipe it is combined with the romesco sauce, typical of traditional Catalan cuisine, made with ingredients of great nutritional interest. Almonds and olive oil provide essential fatty acids and tomatoes and peppers provide vitamins and minerals.
