Rabbit in black beer

INGREDIENTS:
1 rabbit of 1-1.5 kg, 3 onions, 8 mini carrots, 400 ml of black beer, 200 ml of poultry broth, olive oil, rosemary flowers and salt.

ELABORATION:
1. Chop the rabbit, season it and fry it in a pan with oil evenly until golden. Reserve on absorbent paper to remove excess oil.

2. Sauté the chopped onion in a saucepan with oil, together with the carrots, adding a pinch of salt. Add the beer, increase the intensity of the fire and add the rabbit.

3. Let cook for a few minutes, add the poultry stock and keep on the fire until three quarters of the total volume evaporates.

4. Serve the rabbit stew garnished with some rosemary flowers.

TRICKS AND TIPS:
The beer provides an original flavor and softens the rabbit meat, achieving a very smooth texture. It is important to cook long enough for all the alcohol to evaporate. As a garnish, we suggest some baked potatoes or a rich varied salad, sources of vitamins and minerals.
