Rabbit sautéed with wild mushrooms and asparagus

INGREDIENTS:
1 rabbit of 1-1.5 kg, 1 bunch of wild asparagus, 250 g of mushrooms, 3 tablespoons of soy sauce, olive oil, 100 ml of white wine, 1 sprig of rosemary, pepper and salt.

ELABORATION:
1. Remove the hardest part of the asparagus, clean the mushrooms with a damp cloth and chop both ingredients.

2. Chop the rabbit, season it and fry it in a saucepan with olive oil. Add the asparagus and mushrooms until golden brown. Add the white wine and the sprig of rosemary, cook for a few more minutes. Finally, add the soy sauce and remove the saucepan from the heat.

3. Correct the salt and serve.

TRICKS AND TIPS:
With this recipe a very healthy dish is prepared in a short time. Different types of mushrooms can be used depending on the season. For a more complete dish, you can add some cooked laminated potatoes to the sauce or accompany the rabbit with a garnish of white rice, which can be mixed with the vegetables.
